My favorite lunch
I fell in love with this Roasted Red Pepper and Sweet Potato Soup recipe a few years ago l and I have played with the spices such as using Tumeric and I also love adding cilantro in before blending! I Seriously I don’t think you can mess this up!
Roasted Sweet Potato and Red Pepper Soup – Vegan & Gluten Free
Prep time: 10 min | Cook time: 40 min | Yield: 4 servings
Ingredients
· 1 pound sweet potatoes peeled and cubed
· 2 red peppers cut into chunks
· 1 Medium yellow onion diced
· 4 Garlic cloves peeled
· 1 tablespoon of olive oil
· 2 1/2 Cups of Vegetable broth
· 1 teaspoon smoked paprika
· 1 teaspoon cumin
· 1 teaspoon salt
Instructions
· Pre-heat oven to 375 degrees
· Add the sweet potatoes, red peppers, onion and garlic to a parchment lined baking sheet. Toss with olive oil and spices to coat and spread out to an even layer. Roast in the oven for about 30 minutes or until fork tender.
· Add the roasted vegetables to a large pot with the vegetable broth, stir well and bring to a simmer for about 10 minutes.
· Turn off heat and blend soup until smooth with a handheld blender or you can transfer to a standing blender. Salt and pepper to taste.
· I like to add a drizzle of siracha sauce.
