Turmeric Cabbage Soup

First off, I’m obsessed with cabbage, I always have shredded cabbage in the fridge to add to various dishes. During the last snow storm I wanted to try something new so I researched various cabbage soup recipes and based on what I found I made my own version using the flavors I love most (turmeric & ginger).

This soup is so easy and so nutritious and perfect for a cold day! I always have frozen crushed ginger cubes from Trader Joe’s in my freezer, not only for this soup but I use for rice, curries and stir fries!

Turmeric Cabbage Soup

Prep time: 10 min | Cook time:  45 min | Yield: 4 servings

Ingredients

·       1 Tablespoon Oil

·       1 Medium yellow onion diced

·       2 Garlic cloves minced

·       2 Carrots sliced

·       ½ Head of green cabbage shredded

·       2 cups of cooked and shredded chicken

·       6 cups of chicken broth

·       1 teaspoon of turmeric

·       1 teaspoon frozen ginger cube (optional)

·       1 teaspoon salt

Instructions

  • Heat oil in large pot over medium heat.  Add chopped onion and minced garlic, and sauté until onion is transparent, about 5 minutes. 

  • Add sliced carrots, turmeric, ginger (if using) and shredded cabbage to pot, stirring occasionally, and cook for another 10 minutes until vegetables begin to soften. 

  • Stir in the shredded chicken and pour in broth.  Salt & pepper to taste.

  • Bring soup to boil, then reduce heat to low and simmer for 20 minutes.

  • Serve with warm crusty bread.
