Turmeric Cabbage Soup
First off, I’m obsessed with cabbage, I always have shredded cabbage in the fridge to add to various dishes. During the last snow storm I wanted to try something new so I researched various cabbage soup recipes and based on what I found I made my own version using the flavors I love most (turmeric & ginger).
This soup is so easy and so nutritious and perfect for a cold day! I always have frozen crushed ginger cubes from Trader Joe’s in my freezer, not only for this soup but I use for rice, curries and stir fries!
Turmeric Cabbage Soup
Prep time: 10 min | Cook time: 45 min | Yield: 4 servings
Ingredients
· 1 Tablespoon Oil
· 1 Medium yellow onion diced
· 2 Garlic cloves minced
· 2 Carrots sliced
· ½ Head of green cabbage shredded
· 2 cups of cooked and shredded chicken
· 6 cups of chicken broth
· 1 teaspoon of turmeric
· 1 teaspoon frozen ginger cube (optional)
· 1 teaspoon salt
Instructions
Heat oil in large pot over medium heat. Add chopped onion and minced garlic, and sauté until onion is transparent, about 5 minutes.
Add sliced carrots, turmeric, ginger (if using) and shredded cabbage to pot, stirring occasionally, and cook for another 10 minutes until vegetables begin to soften.
Stir in the shredded chicken and pour in broth. Salt & pepper to taste.
Bring soup to boil, then reduce heat to low and simmer for 20 minutes.
Serve with warm crusty bread.
